Banana and Macadamia Bread

Tried out a great recipe recently with friends that was a hit! This could also be really nice for breakfast as you get a healthy dose of energy from the nuts and banana!


Use organic when possible for the ingredients below.  I also used unsweetened apple sauce and shredded coconut.

  • 1 cup of shredded coconut
  • 3 ripe bananas (I used large bananas if small I would use 4)
  • 3/4 cup coconut flour
  • 1/3 cup apple sauce
  • 6 Medjool dates
  • 1/2 tsp. vanilla essence
  • 1/2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/8 tsp. Celtic sea salt
  • 3/4 cup macadamia nuts


Preheat oven to 300˚F

Mix all bread ingredients together except for the flour and macadamia on a med setting in a food processor or blender.  

Then add the coconut flour and mix until it reaches a dough-like consistency.

Fold in the macadamia nuts to the food processor.

Put into the oven for about 40 - 45 minutes.

Take out and let it cool before serving.
